Vic's Fish Taco's

My husband and I got the idea for these fish taco's when we couldn't seem to find a recipe that didn't include mayo, which we are not a fan of. We decided pico de gallo would team up great with the fried fish, and boy were we right! They are delicious, and the lemon juice gives it the perfect tang. I hope you enjoy this recipe as much as we do :)


Ingredients

1 small bag Louisiana, New Orleans style fish fry
1 container store bought pico de gallo
3 fresh lemons
1 pckg tortillas
4 pieces talapia
Tsp Mexican style chili powder
 Shredded lettuce
Cheddar cheese

Step one.
 Cut talapia into halves. Pour fish fry into bowl and add tsp of Mexican chili powder to the mix, coat each piece, deep fry until golden brown.


Step two
Add deep fried talapia to tortilla, squeeze lemon juice over fish, add pico de gallo, lettuce, and cheese, fold over and enjoy :)

Chicken Fricassee





 Ingredients

1 pound chicken breast
1 package andouille sausage sliced
5 green onions chopped
1 onion chopped
1 cup vegetable oil
1 cup all purpose flour 
7 cups water
5 stalks celery chopped
2 tbsp Tony's seasoning
2 tsp cayenne pepper
2 tsp salt 
2 tsp black pepper


Step 1
Saute chicken and sausage in a large skillet for 4 to 5 minutes. Remove meat from skillet, add green onions and onion and saute until soft. Set aside.

Step 2
To Make Roux: In a small saucepan stir together oil and flour over low heat; cook until color is caramel and mixture is reduced to 1 cup of roux. Set aside.

Step 3
Put water in a large pot. Add the chicken, sausage, onion mixture, celery, seasoning, cayenne pepper, salt, ground black pepper and garlic. Bring to a boil and cook for 20 minutes. 
Add  cup roux and stir together; the mixture should have the consistency of chowder.


Step 4
Reduce heat to medium low and simmer uncovered for 2 hours, stirring occasionally. Serve over rice and enjoy :)

Need proof that it's good??? Let's ask our 4 year old :)

Steak Fajitas, Oh Yes!



Ingredients

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 sweet onion
round steak
1 pack taco bell fajita seasoning
tablespoon olive oil
1 pack medium sized tortillas


Step one:
Cut steak into strips, add olive oil to skillet, add steak to skillet and cook until done.

Step two:
Add peppers, onions, and fajita seasoning to skillet cook for 10 minutes, add to steamed tortilla, and enjoy.

Tip: We add a little A1 sauce to ours, and it kicks it up a notch.

Insanely Easy Teriyaki Chicken





Ingredients

1 bottle teriyaki sauce
1/2 cup of soy sauce
4 chicken breast
1 bell pepper chopped
1 onion chopped
1 can pineapple chunks drained (or add the juice if you'd like, no harm)
pre-cooked rice

Step one..
Add chicken, teriyaki sauce, and soy sauce to a bowl, cover and let stand in the refrigerator for at least 3-4 hours. 

Step two...
Preheat oven to 350 degrees
Add chicken, sauce, peppers, onion, and pineapple in baking dish
bake in oven for an hour. Serve over rice and enjoy :)

Hungry Boy Casserole

Thursday (Januray/3/2013) Hungry Boy Casserole









I wasn't going to start this blog tonight. I was going to wait until next week but I just couldn't do it. I was far too excited! My husband and I love to cook, so it was only natural that we start a cooking blog. My husbands mother used to make this for him. I had never even heard of it until I met him, but I must say it's really good. So here is our hungry boy casserole, enjoy :)


1 1/2 lb. ground beef


1 cup chopped celery

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1 garlic clove, minced

1 cup Ketchup

3/4 cup water
1 teaspoon paprika

1/2 teaspoon salt

1 (16-oz.) can baked beans

1 can Pillsbury biscuits

 Preheat oven to 425 degrees. 

In a 12 inch skillet combine ground beef, onions, celery, bell pepper, garlic. 
Cook until no longer pink, then drain. 
Back into skillet.. Add ketchup, salt, paprika, baked beans, simmer for 10 minutes, or longer if you'd like. 
Pour mixture into casserole dish, lay biscuits on top of mixture. 
Bake in oven for 20-25 minutes
(I just kept an eye on it, until the biscuits were done). 

Serve, and enjoy! :)
